Damnit. I agree with you on the basic level, but now despite my basic trio-shippness, I kind of want a thoughtful fic that is basically Harry and Ginny learning to live together and to love each other in a way more complex and solid way as those things wear off and they have a life together they still don't want to abandon. :|
However, in general, I think it's easier to make Great Romance with Limited Screentime work when you have a direct line into the character's head, something books offer and movies don't really.
I agree re: Dumbledore backstory; it also always worked for me that he came to who he was as Headmaster THROUGH having almost made really, really horrific pseudo-well-intentioned mistakes. Not that he's perfect as Headmaster or anything, but comparatively.
I wish Harry had done the repair of his own wand before he broke the Elder Wand, though. I always liked that moment.
